food: easiest chicken curry

This one's going into the 'favorites' box along with other tasty, embarrassingly simple recipes like salsa chicken & quick marinara.  I picked up a thing of curry powder from the supermarket & it had a recipe on the side so basic I had to try it....and it turned out delicious.  So here you go.


Easiest Chicken Curry

1 lb boneless chicken, cubed
3 small onions, diced
3 tb curry powder
butter
salt

saute diced onions in a goodly amount of butter until translucent.
add curry powder, stir, continue to simmer a few minutes more.
add chicken, stir, cover & cook over low heat until chicken is cooked through, about 10 minutes.
Adjust seasoning & serve over rice.

I tarted it up a bit with some bonus spices as I had a bit over the suggested limit of chicken and added a can of drained rinsed chickpeas for good measure- a teaspoon each of turmeric, coriander & cumin, along with about a 1/2 tsp of ground allspice that was sitting in the pestle from Tiner's gingerbread cupcakes the other night.

But it was amazingly good.  Of course you can complicated it by adding some plain yogurt, or minced cilantro, or do it with green beans & potatoes, or whatever.  But the basic formula of butter + onion + curry powder is bulletproof.
